A Roman-style pizza baked in the pan earned State of Mind Public House and Pizzeria’s Lars Smith a silver medal in the 2018 West Coast U.S. Pizza Cup last month. The summer ratatouille pizza, based on his grandmother’s recipe, will make a brief appearance in Los Altos Sept. 26 when Smith sends special editions of the prize-winning pizza into his ovens from 5 p.m. until they run out, as well as pouring the Belgian Saison-style beer he used for pairing during the competition, Modern Times’ Transit of Venus.
The pizzeria’s autumn menu includes a new pan pizza in the regular rotation, a double-proofed, double-baked “Grandma Pie,” limited to 10 pizzas served per day. Other new pizza additions include leek gratin, a brussels sprouts and bacon pie with apple vinegar, and an ‘nduja cream and shishito pepper pie. ‘Nduja is a spicy, soft pork sausage.
The West Coast Pizza Cup serves as a qualifying round for competition in the World Pizza Championship next April, an event at which Smith has triumphed in the past. His restaurant at 101 Plaza North was founded with an award-winning pizza already on the menu combining duck, foie gras and cherries. Smith has described participating in industry competitions as way to build business ties as well as bond with the “pizza community.”
