Cooking isn’t high on my mom’s list of priorities, but the few dishes she cooks are delicious. Growing up in India, we always enjoyed her moist and tender “chicken a la Loknath” (named after the person she learned it from). She usually made it when my dad or one of us four children was sick, because it has just a touch of oil and no spices.

Ingredients:
1 teaspoon oil
1 teaspoon sugar
1 pound bone-in chicken breast, chopped
salt to taste
2 cups water
2 teaspoons lemon juice
Heat oil over low heat and add sugar. Warm a couple of minutes until sugar caramelizes and turns a light golden. Add chicken and saute for a few minutes on medium heat. Add salt and water. Cover and simmer until chicken is tender and water has dried up. Turn off heat and add lemon juice.Janice’s Mom,
