We always knew summer was around the corner when my mom made this delicious shrimp salad. Perfect for warm summer Los Altos days.

Ingredients
¼ cup chopped green onion
¾ cup chopped green pepper
2 cups cooked rice
1 tablespoon vinegar
2 tablespoons salad oil
½ teaspoon curry powder
2 cups cooked shrimp (salad size)
¾ cup mayonnaise
Combine first six ingredients and set aside 4 hours or overnight.
Before serving, mix in shrimp and mayonnaise.
